Savoy cheeses offer a wide and varied array of rich flavours throughout the year. The variations in flavour are not only due to the animal feed: grass in summer and hay in winter, but also to the raw milk, which allows for a greater aromatic diversity.

Chevrotin (PDO)
Chevrotin is an exclusively raw milk, farm-made cheese. Its production is unique for a goat’s milk cheese and similar to that of its neighbour, Reblochon. Goats and bovine herds cohabit happily in the region and both cheeses are often ripened in the same cellars. While production is small, each producer’s know-how ensures Chevrotin’s supple texture and complex aromatic bouquet will delight even the most jaded of palates.
