Banon (PDO)
It is rumoured that this small goat’s milk cheese was served to Roman emperors. It is one of the few goat’s milk cheeses produced following the soft curd technique developed by master cheese makers. Wrapped in chestnut leaves and tied with a raffia string ensures that it will not be spoiled by air and that it can be kept for several months.
