Bleu de Gex Haut-Jura (PDO)
This little-known blue cheese made its debut in the French Royal Court in 1530 thanks to Charles Quint who was allegedly a devoted cheese enthusiast. Made from Montbéliarde or Simmental cows’ milk, it is matured in cellars during which its interior becomes speckled with blue over the weeks. It is a mild cheese that is also ideal for a "raclette"
