The Tours population used to take "talmouses", which were small, savoury cheese pastries, shaped as either tartlets, three-corner hats or small crosses.

Sainte-Maure-de-Touraine (PDO)
French novelist Balzac referred to this cheese as early as 1841. It is easily recognised by the rye straw impaled in the cheese for ease of handling. These days, producers laser engrave the Appellation and producer ID number on the straw, to avoid counterfeit. Covered with a combination of ash and salt, it is available soft, semi-ripe or ripe.
