Pouligny-Saint-Pierre (PDO)
Pouligny-Saint-Pierre comes from the smallest Designation of Origin area located in the heart of Brenne’s regional natural park. Its pyramid shape is thought to have been inspired by the clock tower of the Pouligny-Saint-Pierre church in the Indre department. Hand-moulded, then salted and matured for approximately ten days, it is smooth, soft and white on the inside. Glints of light blue mould appear after further ripening and the texture hardens, allowing the cheese to be toasted or cubed for salads.
